Yam Pottage & Grilled Fish Suya
You can’t understand how good this is until you taste it.
That’s all.

Ingredients

  • Yam (1 medium)
  • Water
  • Palm Oil (1 cooking spoon)
  • Blended peppers/tomatoes (1.5 cups)
  • Onions (1 med)
  • Cray fish (3 tbsp)
  • Smoked/Dried fish
  • Habanero/Hot Pepper (1)
  • Maggi/Knorr Cube (2 cubes)
  • Salt
  • Sugar
  • Tilapia Fish (scaled and cleaned)
  • Suya spice

Directions

Cut the yam into large cubes and put in a pot of water. Add 1 tspn salt and 1 tbspn sugar and boil till the yam is half way cooked.


Strain the yam to remove the water and add onions, peppers, cray fish, maggi, smoked fish, blended peppers and palm oil


Stir with 1 cup water and put the pot on low-med heat. Cover the pot and let it slow cook for 20-25mins
Taste for salt and check whether the yam is fully cooked.
Once fully cooked, stir the contents and crush some pieces of yam, leaving others whole.
Make 2-3 diagonal incisions on the body of both sides of the fish
Generously salt it and roll it in suya spice. Wrap in aluminum


Put in the oven at 350F till fully cooked (depending on how big the fish is, but at least 25mins)
Uncover the fish and change the oven setting to “broil” (at 500F) for additional 10 minutes so it browns on both sides
Serve the fish with some yam pottage on the side.


Recommended drink: Malt or “Mineral” (Fanta/Coke/Sprite)
