Ingredients
  1. 1 Plantain
  2. 1 Avocado
  3. 1/2 (diced) Tomato
  4. Red onion (Chopped)
  5. Pinch of salt
  6. 1 cup Cooking oil
  7. 1 Lime
Instructions
  1. Thinly slice the plantain length-wise and sprinkle a bit of salt over it
  2. In a large frying pan with cooking oil, fry the plantain till it browns. Once fried, place on a paper towel to remove excess oil
  3. Slice the avocado in half and remove the seed
  4. Scoop its contents into a bowl
  5. Add the chopped onions, tomatoes, pinch of salt and pepper and squeeze of lemon
  6. Mix in the guacamole
  7. Serve beside the plantain chips
