Nigerian Native Jollof Rice

You know anything Tatashey makes must have a twist. I started preparing for this particular recipe with the aim of doing it the “regular” way but let’s just say that one thing led to the other and well… this is not your typical native Jollof rice. I wish I could give you all a spoon to taste this some of this amazingness but… it’s finished sorry.

Ingredients
  1. 2 cups parboiled rice
  2. 1 cooking spoon palm oil
  3. 1 cup blended peppers
  4. Seasoning
  5. 1 habanero pepper - chopped
  6. 1/4 medium red onion - sliced
  7. Dried shrimps - a small handful
  8. 2 tablespoons rayfish
  9. 1 tablespoon Iru/Locust beans (optional)
  10. 1 whole smoked fish
  11. Cow leg
  12. Goat meat
  13. Ponmo
  14. Pumpkin leaves/spinach - a handful - sliced
Instructions
  1. Dice all the meats into very small pieces
  2. Heat palm oil in a pot on medium heat
  3. Add onions and peppers and lightly fry
  4. Stir in the meats, season and reduce the heat. Cook for 10 minutes
  5. Pour in the blended peppers and stir thoroughly. Turn heat to medium and fry peppers
  6. Add dried shrimps, crayfish and iru and mix it in. Add parboiled rice with a little water (1/2 cup at a time)
  7. Cover pot, turn heat to low and cook until rice is soft
  8. Once rice is done, add sliced pumpkin leaves/spinach, mix and take off heat
  9. Serve immediately
