Ingredients
  1. 1 cup roasted ground nuts (or 1/4 cup peanut butter)
  2. Assorted meats - boiled (cow leg, goat meat, shakki, beef, etc)
  3. 3 cups beef broth/stock
  4. 2 tablespoons palm oil
  5. 2 teaspoons ground crayfish
  6. 1/2 teaspoon ground dried pepper
  7. Few leaves of fresh spinach - chopped (optional)
  8. Salt to taste
Instructions
  1. Using a small grinder or food processor, grind the groundnuts till it becomes a smooth paste (like peanut butter)
  2. Heat the stock in a small pot and add crayfish, ground pepepr and the peanut butter/groundnut paste
  3. Stir till there are no lumps. Turn heat to low and leave liquid to reduce for approximately 15-20 minutes, stirring occasionally to prevent burning
  4. Add palm oil and meats then cook for additional 5 minutes
  5. If cooking without spinach, soup is ready. If cooking with spinach, add spinach, stir and simmer for 2-3 minutes
  6. Once soup is ready, serve immediately
Notes
  1. Spinach can be substituted for pumpkin leaves or bitter leaves
