Jollof Chicken Wings: The Greatest Wings That Ever Cooketh
This has to be one of my favorite wing recipes (I feel like I say this about every recipe). The other day, I was looking for different ways to make wings and I came across the usual BBQ, Breaded, Crispy, Fried, Honey Garlic…. and the boring list goes on and on. But NO! I didn’t want any of those, (ok, I lied, I actually ended up making BBQ wings and Breaded wings too, but that’s besides the point) I was looking for something more. I always knew my wings were special. They had a higher calling than the rest of those basic wings out there.
My wings were destined for greatness. 
So I sat down to think and I asked myself, what is the one thing that can change the outcome of any Nigerian meal? Then it hit me – Jollof. That was the answer. You see, for all you Non West Africans out there, Jollof is a life changing, sacred method of cooking. I won’t try to explain just how hallowed Jollof is for fear that my depiction would fall short of its true glory. But let me tell you, it’s misuse (especially by non West Africans, cc: Jamie Oliver’s Jollof Recipe) has caused many battles – just read the comments under that recipe and this follow-up blog post.
Nevertheless, Jollof transformed my wings. And the wings were so great that I went above and beyond for you all and shot a video of them basking in their jollofness. Yep, I just made that word up. Sue me. But first, try the recipe

Ingredients

  • Chicken wings (3 lbs)
  • Cooking oil spray
  • Ginger spice (1 tspn)
  • Garlic spice (1 tspn)
  • Knorr cube (1)
  • Salt (1/4 tspn)
  • Onion (1/2 med – sliced)
  • Scotch bonnet pepper (1 1/2 – chopped)
  • Tomato sauce (3/4 cup)

Directions

Season the wings with knorr cube, salt, ginger and garlic spice. Spray oil on a nonstick pan (very little oil is needed) and turn the heat to high and add the chicken


Brown the wings on all sides then turn the heat down to med-low. Add the onions, peppers and tomato sauce and combine


Leave to simmer for 15-20 minutes or  until the tomato sauce is no longer “watery/soupy” but coats the wings fully
