Ginger Beef & Jasmine Rice
I think I have an unhealthy obsession with Jasmine rice. It is probably because I am so tired of always eating regular long grain rice – you know how we West Africans love our rice. Almost everyday for the past week, I have eaten Jasmine rice with one sauce or the other. But today I prepared a really simple meal, one that I usually order from Chinese takeout, gingered beef sauce.
Confession: 

Okay so I know the title says “Gingered Beef”, but I actually added a bit of goat meat because… well because it was available and as far as I am concerned, meat is meat. No, wait! I take that back. Meat is NOT meat; because personally, I wouldn’t just toss a few bits of dog or horse meat into my food. But I am not going to go down that road because dog/horse meat is probably a delicacy in some cultures.

But that’s none of my business.

Ingredients

  • Oil – (1 tbsp)
  • Beef – Cut into thin strips/ diced
  • Grated fresh ginger (3 tbsp)
  • Garlic – 2 tbsp minced/grated
  • Onions – 1 small Sliced
  • Mixed Vegetables – (fresh/frozen: bell peppers, mushrooms, green beans, broccoli etc)
  • Beef/Chicken broth – 1 1/2 Cups
  • Soy sauce – 2 tbsp
  • Cornstarch/ Flour – 3 tbsp
  • 1/4 cup (50 mL) water
  • Jasmine Rice (1 cup) – Cooked

Directions

Mix beef and ginger and garlic in a bowl. In a large skillet, heat oil and add the beef mixture; fry for 5 minutes till brown on both sides


Add onions and mixed vegetables to stir fry till tender; add soy sauce and chicken broth then bring to simmer for 1 minute


Dissolve the flour/cornstarch in water and add to simmering broth, stirring to thicken sauce. (Should take 1-2 minutes)


Serve over Jasmine Rice or noodles if you prefer
