Country Style Eating: Corn Bread and Pulled BBQ Chicken
I have to admit, I was going to make the corn bread from one of those ready made mixes (*gasp* yeah, I know it’s abominable). But when I couldn’t find it, I decided (read: was forced) to make it from scratch. It was still a lot of fun nonetheless! Enjoy 





Corn Bread and Pulled BBQ Chicken

Corn Bread
  1. 1 Cup Flour
  2. 1 Cup Cornmeal
  3. 1 Cup Milk
  4. 2 Eggs
  5. 1/4 tsp salt
  6. 1 tbsp baking powder
  7. 1/2 Cup melted butter
  8. 1/2 Cup Sugar
BBQ Pulled Chicken
  1. 6 pieces of chicken (breast preferably)
  2. 1 cup bbq sauce
  3. Salt & pepper to taste
Instructions
  1. Boil the chicken until it is fully cooked and can easily fall off the bone (if it has bones). Then take the pieces out and put them in an oven tray to dry
  2. Mix the flour, salt, sugar, cornmeal, and baking powder in a bowl. In a separate bowl, whisk the eggs, melted butter and milk together. Then thoroughly mix the liquid into the dry ingredients
  3. Heat up the oven to 375 F. Pour the cornbread batter into a baking tin, then put it in the oven until it is fully baked. (25-35 minutes)
  4. Remove bones and skin from the chicken. Using two forks, shred the chicken by pulling it apart along the grain.
  5. Once fully shredded, mix in the bbq sauce and put the chicken in the oven for 10-15 minutes at 400F.
