Intro:
So the other day I was looking through my archive and I realized that only two of my most recent recipes were plantain based! (This famous one and that healthy one.) ABOMINATION! How is it possible that I, Tatashey – the one that eats plantain almost daily –  have so few plantain recipes?? I was baffled. Therefore, I have decided to honor greatness of plantain by dedicating a whole week to it. Each day, I will post a unique plantain recipe for you all to check out and try yourselves.

OMG it’s Day 5! WHY OH WHY? 🙁 I started this 5 Days of Plantain challenge because…. well because I love plantain. Now, it’s over and I’m already thinking of other plantain ideas for when I do a Part 2 of this series. Perhaps plantain sushi? I was going to make plantain pancakes at some point, but it didn’t make the cut for top 5. So there will definitely be another Plantain Series in 2015! Maybe next time it will be 10 days of plantain! Or a whole month of plantain! HOW ABOUT 100 DAYS OF PLANTAIN?!?! *hyperventilating*

Clearly, I need to calm down. The last, but definitely not the least, recipe is Plantain Skillet! Well, mine is not exactly in a skillet but who are you to judge?

Ingredients

  1. 2 large potatoes – diced and boiled
  2. 1 teaspoon butter
  3. 1 ripe plantain – diced
  4. Oil for frying
  5. Onions – diced
  6. Green bell pepper – diced
  7. Red bell pepper – diced
  8. 1 egg
  9. Salt to taste
  10. 1/4 teaspoon ground black pepper
  11. 1/4 teaspoon oregano

Directions

Fry the plantain till golden brown
Butter the base of an oven safe dish (or skillet). Preheat oven to 400F
Cover the bottom with potatoes, make a ring on the outer edge with plantain, peppers and onions


Crack egg and place in the middle. Season with salt, black pepper and oregano
Bake in oven for 15 minutes or until egg is fully cooked. Serve immediately
