5 Days of Plantain Day 3: Plantain Guacamole and Shrimp Cups
Intro:
So the other day I was looking through my archive and I realized that only two of my most recent recipes were plantain based! (This famous one and that healthy one.) ABOMINATION! How is it possible that I, Tatashey – the one that eats plantain almost daily –  have so few plantain recipes?? I was baffled. Therefore, I have decided to honor greatness of plantain by dedicating a whole week to it. Each day, I will post a unique plantain recipe for you all to check out and try yourselves.

Happy Wednesday Tatashey Family! I’m back with Day 3 of the 5 Days Of Plantain Challenge! Today’s is a quickie recipe – Plantain, guacamole and shrimp cups!

Ingredients

  • 1 ripe plantain – peeled and cut into 6-7 chunks
  • 3 tablespoons olive oil
  • Shrimp – peeled
  • 2 Cloves garlic – diced
  • 1 medium avocado
  • Onions (1 tablespoon – diced)
  • Tomatoes (1 tablespoon – diced)
  • Salt – to taste
  • 1 teaspoon lemon juice

Directions

Heat 2 tablespoons oil on medium heat, and fry plantains till golden brown all over


Squeeze each slice in the centre (preferably using a lemon squeezer, but I used a spoon for lack of utensils) to form small cups


Refry each slice again till all yellow sides are golden brown
Heat 1 tablespoon oil in small pan and add garlic and shrimp and cook until it turns pink. Season with salt then remove from heat


Peel avocado and crush contents in a small bowl with a fork. Mix in lemon juice, onions and tomatoes. Season with salt


Spoon 1 tablespoon of guacamole into plantain cups and top with shrimp


Serve immediately
