So to kick off Day 1 I present a savory Plantain Lasagna recipe. The combination of the sweetness of plantains, the spiciness of meat and the creamy-ness of the cheese… Oh Lord! You can’t beat this.
Ingredients
4 very ripe plantains
1/4 cup oil (divided)
1lb ground beef (or pork/chicken)
1/2 cup diced green & red bell peppers
1/4 cup diced onions
2 cloves garlic (minced)
1 knorr cube
1/3 cup tomato sauce
Cheese (mozzarella or preferred choice)
2 eggs
1 tbsp milk
Directions
Cut plantain lengthwise (into 3-4 each) and fry in shallow oil till golden brown. Place on kitchen towel and set aside
Mix the ground beef, onions, bell peppers, garlic, parsley and knorr cube thoroughly
Heat 2 tablespoons oil in a pan and fry the ground beef. Once it browns, add the tomato sauce
Cook for additional 5 minutes and take off heat. Preheat oven to 350F
Butter the oven safe dish and arrange one layer of plantain
Place a layer of ground beef and top off with cheese. Layer plantain over it and one more layer of cheese
Beat eggs with 2 tbsp milk and pour over lasagna then let sit for 3 minutes so the plantain soaks up the eggs
Place in oven for 20 minutes then take out and serve hot

I don’t have an oven now and I have been promising my husband I would make him Lasagna (Pasta). But he is a lover of plantain and this would be lovely for him. Is there anyway I can make it either in a microwave or on the stove?
Hey Sheba! You definitely can. Just follow all the steps and when you get to the part where you need to use the oven, just cover the oven dish tightly and pop it in the microwave on high. 🙂 Hope that helps!
